Position Overview
The Assistant Manager is responsible for assisting in daily production operations to include harvest, fabrication and processing of meat. The Assistant Manager will be responsible for verifying that all food safety programs are being followed and that products are safe and of high quality. The Assistant Manager will assist the manager in oversight of the meats operational budget and maintenance of the facility. This individual will also assist in the training and supervision of the student workers in daily operations.

Position Qualifications


Required Experience
  • Experience in a meat processing facility.
Required Education
  • Bachelor’s Degree in animal science, food science or other agricultural emphasis or equivalent.
Required Other
  • Completed HACCP course and be certified within six months of employment.
Additional Preferred
  • Experience in the operation of a USDA Inspected meat processing facility or University Meat Lab, including food safety requirements.
  • MS in animal science or food science.
  • Experience training/managing employees.
Physical Requirements & Working Conditions
  • Able to lift, carry and/or otherwise move items weighing up to 50 pounds.
  • Ability to work in cold environments and on concrete floors.
