Consumer responses to the carbon price of food: Preferences and willingness
to pay for low-emission products

The dissertation focuses on analyzing the reactions of Slovak consumers to the introduction of carbon
pricing in the food sector and assessing the degree of substitution of emission-intensive foods with
low-emission alternatives. The research is based on random utility theory and uses the Discrete Choice
Experiment (DCE) method to identify consumers' preference structure when choosing food, especially
in the categories of red meat and dairy products, which are among the most emission-intensive
commodities. The main objective is to estimate the marginal willingness to pay (WTP) for low-emission
foods and to examine the extent to which price differentiation motivates consumers to substitute
towards more environmentally friendly or plant-based alternatives. The analysis also examines the
existence of consumer segments with different preference structures and assesses the relative
strength of the price effect compared to environmental labeling of products. The research tests the
following hypotheses: (H1) an increase in the price of emission-intensive foods leads to a statistically
significant substitution towards low-emission alternatives; (H2) higher income increases the
willingness to pay for low-emission products; (H3) consumers with higher environmental literacy show
lower price elasticity for low-emission products; (H4) there is a latent group of highly price-sensitive
consumers. The expected benefit is the quantification of demand responses to climate pricing in agri-
food and the identification of distribution and behavioral factors that influence the effectiveness of
carbon pricing as an environmental policy tool. The results provide an empirical basis for the
development of policies aimed at reducing greenhouse gas emissions through changes in consumer
behavior.
Spotrebiteľské reakcie na uhlíkovú cenu potravín: Preferencie a ochota platiť
za nízkoemisné produkty

Dizertačná práca sa zameriava na analýzu reakcií slovenských spotrebiteľov na zavedenie uhlíkovej
ceny v potravinovom sektore a na posúdenie miery substitúcie emisne intenzívnych potravín
nízkoemisnými alternatívami. Výskum vychádza z teórie náhodnej užitočnosti a využíva metódu
Discrete Choice Experiment (DCE) na identifikáciu preferenčnej štruktúry spotrebiteľov pri výbere
potravín, najmä v kategóriách červeného mäsa a mliečnych výrobkov, ktoré patria medzi emisne
najnáročnejšie komodity. Hlavným cieľom je odhadnúť marginálnu ochotu platiť (WTP) za nízkoemisné
potraviny a preskúmať, do akej miery cenová diferenciácia motivuje spotrebiteľov k substitúcii smerom
k environmentálne šetrnejším alebo rastlinným alternatívam. Analýza zároveň skúma existenciu
segmentov spotrebiteľov s odlišnou preferenčnou štruktúrou a hodnotí relatívnu silu cenového efektu
v porovnaní s environmentálnym označením produktov. Výskum testuje nasledujúce hypotézy: (H1)
zvýšenie ceny emisne intenzívnych potravín vedie k štatisticky významnej substitúcii smerom k
nízkoemisným alternatívam; (H2) vyšší príjem zvyšuje ochotu platiť za nízkoemisné produkty; (H3)
spotrebitelia s vyššou environmentálnou gramotnosťou vykazujú nižšiu cenovú elasticitu pri
nízkoemisných produktoch; (H4) existuje latentná skupina cenovo vysoko senzitivných spotrebiteľov.
Očakávaným prínosom je kvantifikácia dopytových reakcií na klimatickú cenotvorbu v
agropotravinárstve a identifikácia distribučných a behaviorálnych faktorov, ktoré ovplyvňujú
efektívnosť uhlíkovej ceny ako nástroja environmentálnej politiky. Výsledky poskytujú empirický základ
pre tvorbu politík zameraných na znižovanie emisií skleníkových plynov prostredníctvom zmeny
spotrebiteľského správania.
