Strategic Innovations of Craft Breweries in the Context of Market Dynamics and Consumer Behaviour

The dissertation focuses on the innovation approaches of craft breweries in Europe and how they respond to changing consumer preferences and competitive pressure from large brewing concerns. Existing studies emphasize the growth of the craft beer market, the increasing need for differentiation and the importance of locality. The thesis therefore fills a research gap in the field of strategic innovations of small breweries in a broader European context. The aim of the work is to identify strategic innovations of craft breweries, examine them through the factor of consumer decisionmaking and analyze how small breweries use innovations to strengthen their competitiveness in a concentrated industry of large breweries. Attention will be paid to comparing the strategic models of small and large breweries, with large concerns primarily using large production scale, investment power and stability of distribution channels, while craft breweries rely on agility, experimental product innovations, local stories and close work with the customer community. To achieve the goal, questionnaire surveys will be developed among craft breweries and subsequently among customers, aimed at identifying existing and potential innovative solutions in products, technologies, marketing, distribution and customer experience. Quantitative findings will be supplemented by qualitative interviews with brewery managers, which will allow for a deeper understanding of the motives, barriers and strategic decision-making processes associated with the creation of innovations. The combination of these methods will allow us to verify which innovations are actually effective for small breweries, what factors hinder their implementation and what distinguishes successful innovative breweries from less successful ones. The research results can be used by small breweries, professional associations, and policymakers when setting strategies for the development of the brewing sector.
Strategické inovácie remeselných pivovarov v kontexte dynamiky trhu a spotrebiteľského správania

Dizertačná práca sa zameriava na inovačné prístupy remeselných pivovarov v Európe a do akej miery reagujú na meniace sa preferencie spotrebiteľov a konkurenčný tlak zo strany veľkých pivovarníckych koncernov. Existujúce štúdie zdôrazňujú rast trhu s remeselným pivom, rastúcu potrebu diferenciácie a dôležitosť lokálnosti. Práca preto vypĺňa výskumnú medzeru v oblasti strategických inovácií malých pivovarov v širšom európskom kontexte. Cieľom práce je identifikovať strategické inovácie remeselných pivovarov, preskúmať ich prostredníctvom faktora rozhodovania spotrebiteľov a analyzovať, ako malé pivovary využívajú inovácie na posilnenie svojej konkurencieschopnosti v koncentrovanom odvetví veľkých pivovarov. Pozornosť sa bude venovať porovnaniu strategických modelov malých a veľkých pivovarov, pričom veľké koncerny využívajú predovšetkým veľký rozsah výroby, investičnú silu a stabilitu distribučných kanálov, zatiaľ čo remeselné pivovary sa spoliehajú na agilitu, experimentálne produktové inovácie, lokálne príbehy a úzku spoluprácu so zákazníckou komunitou. Na dosiahnutie cieľa budú vyvinuté dotazníkové prieskumy medzi remeselnými pivovarmi a následne medzi zákazníkmi, zamerané na identifikáciu existujúcich a potenciálnych inovatívnych riešení v oblasti produktov, technológií, marketingu, distribúcie a zákazníckej skúsenosti. Kvantitatívne zistenia budú doplnené kvalitatívnymi rozhovormi s manažérmi pivovarov, ktoré umožnia hlbšie pochopiť motívy, bariéry a procesy strategického rozhodovania spojené s tvorbou inovácií. Kombinácia týchto metód nám umožní overiť, ktoré inovácie sú pre malé pivovary skutočne efektívne, aké faktory bránia ich implementácii a čo odlišuje úspešné inovatívne pivovary od menej úspešných. Výsledky výskumu môžu byť využité malými pivovarmi, profesijnými združeniami a tvorcami politík pri stanovovaní stratégií rozvoja pivovarníckeho sektora.
